Ingredients
  

  • 2 medium beets roasted and peeled
  • 4 cups mixed salad greens such as arugula, spinach, and romaine
  • 4 ounces goat cheese crumbled
  • 1/4 cup walnuts chopped and toasted
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F. Wrap the beets in aluminum foil and roast for about 45-60 minutes, or until tender. Let them cool, then peel and slice into wedges.
  2. In a large salad bowl, combine the mixed salad greens and sliced beets.
  3. Sprinkle the crumbled goat cheese and toasted walnuts over the top of the salad.
  4. Drizzle the balsamic vinaigrette over the salad and toss gently to combine. Season with salt and pepper to taste.
  5. Serve immediately or chill in the refrigerator for up to 30 minutes before serving for a refreshing touch.
