Ingredients
  

  • 2 medium beets peeled and chopped
  • 2 medium carrots peeled and chopped
  • 1 apple cored and chopped
  • 1 inch piece of fresh ginger peeled
  • 1 tablespoon lemon juice
  • 2 cups cold water
  • Ice cubes optional

Method
 

  1. In a blender, combine the chopped beets, carrots, apple, ginger, and lemon juice.
  2. Add the cold water to the blender and blend on high speed until smooth.
  3. Place a fine mesh strainer or cheesecloth over a large bowl or pitcher. Pour the blended mixture into the strainer to separate the juice from the pulp.
  4. Use a spatula or spoon to press down on the pulp to extract as much juice as possible.
  5. Discard the pulp or save it for another use, such as adding to smoothies or baking.
  6. Serve the juice over ice if desired, and enjoy immediately for the best flavor and nutrients.
