Ingredients
  

  • 1 cup fresh blueberries
  • 1 tablespoon fresh thyme leaves plus extra for garnish
  • 2 ounces gin
  • 1 ounce fresh lemon juice
  • 1 ounce simple syrup 1:1 ratio of sugar to water
  • Club soda
  • Ice cubes

Method
 

  1. In a cocktail shaker, muddle the fresh blueberries and thyme leaves together until the blueberries are crushed and juicy.
  2. Add the gin, fresh lemon juice, and simple syrup to the shaker. Fill the shaker with ice cubes, then shake vigorously for about 15 seconds to combine and chill the mixture.
  3. Strain the mixture into a glass filled with ice.
  4. Top off the drink with club soda to your desired fizz level.
  5. Garnish with a few whole blueberries and a sprig of thyme. Serve immediately.
