Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Melt 1/2 cup of unsalted butter in a medium saucepan over medium heat and brown it for about 6-10 minutes.
  3. Combine the cooled brown butter with 1 cup of brown sugar, then whisk in 1 large egg and 1 egg yolk.
  4. Sprinkle in 1/2 teaspoon of salt and 1 cup of all-purpose flour, mixing until just combined, then fold in 1/2 cup of chopped chocolate.
  5. Pour the batter into the prepared baking pan, spreading it evenly. Optionally, add more chocolate and crushed Biscoff cookies on top.
  6. Bake for 20-25 minutes until lightly browned and mostly clean when tested with a toothpick.
  7. Allow the blondies to cool in the pan for about 2 hours before lifting them out to slice into squares.
