Ingredients
  

  • 2 large cucumbers peeled and diced
  • 1 cup plain Greek yogurt
  • 1 cup vegetable broth chilled
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil optional, for drizzling
  • Fresh dill sprigs for garnish optional

Method
 

  1. In a blender or food processor, combine the diced cucumbers, Greek yogurt, vegetable broth, dill, minced garlic, and lemon juice. Blend until smooth and creamy.
  2. Taste the mixture and season with salt and pepper as needed. Blend again to combine.
  3. Transfer the soup to a bowl or container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
  4. Before serving, stir the soup and adjust the seasoning if necessary. If desired, drizzle with olive oil and garnish with fresh dill sprigs.
