  • 2 cups grated zucchini about 1 medium zucchini, squeezed dry
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Method
 

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, combine the grated zucchini, flour, baking powder, baking soda, salt, and cinnamon. Mix well.
  3. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chocolate chips.
  5. Lightly grease the waffle iron with cooking spray or a small amount of oil. Pour the recommended amount of batter onto the preheated waffle iron and cook until golden brown, usually about 4-5 minutes.
  6. Carefully remove the waffle and repeat with the remaining batter.
  7. Serve warm with your favorite toppings, such as maple syrup, whipped cream, or additional chocolate chips.
