Step‑by‑Step Instructions

  2. Add 1 chopped medium onion to the pot and sauté for about 5 minutes.
  3. Stir in 2 minced garlic cloves and cook for an additional 1-2 minutes.
  4. Add 4 cups of peeled and chopped tart apples, along with chili flakes, smoked paprika, salt, and black pepper.
  5. Pour in 3 cups of vegetable broth and stir to combine all the ingredients.
  6. Reduce the heat to low and let the soup simmer for about 20 minutes.
  7. Blend until completely smooth using an immersion blender.
  8. Return the blended soup to the pot and stir in 1 tablespoon of apple cider vinegar or lemon juice.
  9. Ladle the warm soup into bowls and serve immediately.
