For the Ice Cream
  • 2 cups Dairy-Free Lime Ice Cream Kid-friendly by substituting rum with corn syrup.
  • 2 tablespoons Fresh Lime Zest Zest is preferred but lime juice works.
  • 1/2 cup Fresh Lime Juice Fresh is best but bottled can be used.
  • 1 tablespoon Rum Extract (optional) Vanilla extract can be a substitute.

Method
 

Ice Cream Preparation
  1. Whisk together dairy-free milk, fresh lime juice, and lime zest until smooth. Stir in sweetener and rum extract. Pour into ice cream maker and churn for 20-25 minutes.
Cookies Preparation
  1. Preheat oven to 350°F (175°C). If making cookies from scratch, combine ingredients and shape dough. Spoon onto lined baking sheet and bake for 10-12 minutes. Let cool on a wire rack.
Assembly
  1. Scoop lime ice cream onto a cookie, press another cookie on top, and repeat until finished.
Freezing
  1. Place sandwiches on a lined baking sheet, cover with plastic wrap, and freeze for at least 2 hours.
