- Preheat your oven to 400°F (200°C). Slice the butternut squash in half lengthwise and scoop out the seeds.
- Brush cut sides of squash with olive oil and sprinkle with salt. Place cut-side down and roast for 30-40 minutes.

- Whisk together eggs, heavy cream, salt, and pepper in a mixing bowl until combined.
- Blend roasted squash with half of the cheese until smooth but with some texture.
- Spread sautéed onions in the crust, pour in the squash mixture, and sprinkle with remaining cheese.
- Lower oven temperature to 350°F (175°C) and bake for 35-40 minutes until set and golden.
- Allow to cool for 10-15 minutes before slicing and serving.
