Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Slice the butternut squash in half lengthwise and scoop out the seeds.
  2. Brush cut sides of squash with olive oil and sprinkle with salt. Place cut-side down and roast for 30-40 minutes.
  3. Heat butter in a skillet. Add diced onions and thyme, and sauté for 5-7 minutes until soft.
  4. Whisk together eggs, heavy cream, salt, and pepper in a mixing bowl until combined.
  5. Blend roasted squash with half of the cheese until smooth but with some texture.
  6. Spread sautéed onions in the crust, pour in the squash mixture, and sprinkle with remaining cheese.
  7. Lower oven temperature to 350°F (175°C) and bake for 35-40 minutes until set and golden.
  8. Allow to cool for 10-15 minutes before slicing and serving.
