Panna Cotta Preparation
- Sprinkle 2 teaspoons of gelatin over 2 tablespoons of cold water in a small bowl. Allow it to bloom for about 5 minutes.
- Combine 2 cups of coconut milk, 1/3 cup of honey, and 1 teaspoon of vanilla extract in a saucepan. Heat over medium until simmering, avoiding boiling.
- Remove from heat and stir in the bloomed gelatin, mixing thoroughly for about 1-2 minutes until smooth.
- Carefully divide the mixture into serving glasses or molds, cover, and refrigerate for at least 5 hours to set.
Berry Compote Preparation
- Add 1 cup of mixed berries and 1 tablespoon of honey to a small saucepan. Cook over medium heat for 5-7 minutes until thickened.
- Remove from heat and allow the compote to cool before serving.
Serving
- Once the panna cotta is set, remove from refrigerator and top with the cooled berry compote before serving.
