Method
 

Panna Cotta Preparation
  1. Sprinkle 2 teaspoons of gelatin over 2 tablespoons of cold water in a small bowl. Allow it to bloom for about 5 minutes.
  2. Combine 2 cups of coconut milk, 1/3 cup of honey, and 1 teaspoon of vanilla extract in a saucepan. Heat over medium until simmering, avoiding boiling.
  3. Remove from heat and stir in the bloomed gelatin, mixing thoroughly for about 1-2 minutes until smooth.
  4. Carefully divide the mixture into serving glasses or molds, cover, and refrigerate for at least 5 hours to set.
Berry Compote Preparation
  1. Add 1 cup of mixed berries and 1 tablespoon of honey to a small saucepan. Cook over medium heat for 5-7 minutes until thickened.
  2. Remove from heat and allow the compote to cool before serving.
Serving
  1. Once the panna cotta is set, remove from refrigerator and top with the cooled berry compote before serving.
  2. Enjoy this delightful dessert chilled for the best flavor and texture!
