  • 8 ounces penne pasta

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1 cup spinach chopped
  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and Italian seasoning, mixing until the cheese has melted and the sauce is smooth.
  5. Add the cooked penne pasta and chopped spinach to the skillet, tossing to combine and heat through.
  6. Remove from heat and garnish with fresh parsley before serving.
