- Begin by shucking fresh oysters and reserving their liquor in a bowl for later use. Dice the leek or onion and chop the celery into small pieces for even cooking.
- In a large pot, melt the butter over medium heat. Add the diced leek or onion and chopped celery, sautéing for 3-4 minutes until translucent.
- Add the reserved oyster liquor, whole milk, and heavy cream to the pot, stirring gently. Bring to a low simmer and let it simmer for 2-3 minutes.
- Fold in the fresh oysters along with Worcestershire sauce and Tabasco. Season with salt and white pepper, cooking for an additional 5-7 minutes.
- Remove from heat and serve hot, garnished with parsley and accompanied by oyster crackers.
