  • 1/4 cup Chopped Parsley or basil
  • 1 tsp Onion Powder or fresh onion sautéed
  • 1 tsp Paprika or smoked paprika
  • 1 tsp Salt
  • 1/2 tsp Pepper
For the Creamy Sauce
  • 2 Tbsp Butter or olive oil
  • 2 Tbsp Flour or gluten-free flour
  • 1 cup Milk or plant-based milk
  • 1 cup Mozzarella Cheese or dairy-free cheese
  • 1 pinch Nutmeg omit if desired

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine ground chicken, egg, gluten-free breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, onion powder, paprika, salt, and pepper.
  3. Scoop out the mixture to form medium-sized balls and place them on a parchment-lined baking tray.
  4. Bake for 20–25 minutes until golden brown.
  5. For the sauce, melt butter in a saucepan over medium heat, whisk in flour, then gradually add milk until thickened.
  6. Stir in mozzarella, remaining Parmesan, salt, pepper, and nutmeg to create the creamy sauce.
  7. Transfer cooked chicken bombs to a casserole dish and pour the creamy sauce over the top.
  8. Broil for 3–5 minutes, watching closely until bubbling and golden.
  9. Serve warm with extra sauce and garnish with fresh herbs.
