Method
 

Preparation Instructions
  1. In a large mixing bowl, combine rice flour, corn starch, baking powder, sugar, and salt. Whisk until well mixed.
  2. Gradually pour in ice-cold water, whisking continuously until the batter reaches a pancake-like thickness.
  3. In a large wok or frying pan, heat enough oil to submerge the fritters to approximately 325°F (165°C).
  4. Peel the bananas and cut them into equal-sized pieces. Dip each banana into the prepared batter.
  5. Carefully place the coated bananas in the hot oil and fry for about 2-3 minutes or until they turn golden brown.
  6. Remove fritters from oil with a slotted spoon and allow to drain on paper towels.
