Step-by-Step Instructions
  1. In a medium saucepan, combine blueberries, sugar, lemon juice, and lemon thyme. Bring to a boil, then simmer for 10-15 minutes until thickened. Let cool slightly.
  2. Spread blueberry compote over 4 slices of bread. Top two slices with cheddar and mozzarella.
