  • 1 cup Fresh Blueberries Thaw and drain if using frozen
  • 8 ounces Cream Cheese Mascarpone can be used as an alternative
  • 1/2 cup Plain Greek Yogurt Sour cream can be substituted
For Flavor
  • 1 teaspoon Vanilla Extract Use pure vanilla for best results
  • 2 tablespoons Butter Melted; olive oil can be a dairy-free alternative
For Sweetness
  • 1/4 cup Swerve Confectioner's Sugar Substitute Other keto-friendly sweeteners can also be used

Method
 

Preparation Steps
  1. Preheat your air fryer to 375°F (190°C).
  2. In a mixing bowl, blend the cream cheese, plain Greek yogurt, vanilla extract, and Swerve confectioner's sugar until smooth and creamy.
  3. Spread an even layer of the cream cheese mixture along the center of each tortilla, then add blueberries on top.
  4. Roll the tortillas tightly around the filling, seam side down, and place in a greased air fryer pan.
  5. Brush the tops of the rolled tortillas with melted butter.
  6. Place the roll-ups in the preheated air fryer and cook for about 8-10 minutes.
  7. Dust the tops with additional Swerve confectioner's sugar before serving warm.
