- Pat 1 pound of peeled and deveined shrimp dry. Mince until a smooth paste forms, about 2-3 minutes.
- Combine the shrimp paste with ½ teaspoon of salt, a dash of white pepper, 1 teaspoon of sugar, and 1 clove of minced garlic. Add minced scallion, 1 tablespoon of sesame seeds, 1 egg white, and 1 tablespoon of corn starch. Mix thoroughly for 3-4 minutes.
- Trim the crusts off 8 slices of white bread. Spread shrimp mixture evenly between two slices, pressing gently. Seal edges with a butter knife and repeat until complete.
- Preheat air fryer to 375°F. Brush or spray sandwiches with oil. Arrange in the air fryer basket in a single layer. Air fry for 6 minutes, flip, then cook for another 6 minutes.
- Remove from fryer and let cool for a minute. Serve hot with spicy mayo or favorite dipping sauce.
