  • 1 can 5 oz tuna, drained
  • 1 medium cucumber diced
  • 1 ripe avocado diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cherry tomatoes halved
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh dill or parsley chopped (optional)

Method
 

  1. In a medium bowl, combine the drained tuna, diced cucumber, diced avocado, red onion, and cherry tomatoes.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
  3. Pour the dressing over the tuna mixture and gently toss to combine, being careful not to mash the avocado.
  4. If using, sprinkle fresh dill or parsley on top and give it a final gentle toss.
  5. Serve immediately or chill in the refrigerator for 15-30 minutes to enhance the flavors.
