Preparation
- Preheat your oven to 350°F (175°C).
- Combine the red velvet cake mix, eggs, vegetable oil, and vanilla extract in a mixing bowl. Mix until smooth, about 2–3 minutes.
- Pour the batter into a greased cake pan and bake for 25–30 minutes. Allow to cool completely.
- In a separate bowl, beat softened cream cheese with sugar and vanilla extract until creamy and smooth, about 3–4 minutes.
- Fold in chopped strawberries into the cream cheese mixture.
- Spread the cream cheese and strawberry mixture evenly over the cooled cake layer.
- Cover with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
