Ingredients

For the Pudding
  • 2 ripe avocados slightly past their prime
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup low-carb sweetener can substitute with honey or sugar
  • 1/2 cup heavy cream or milk alternative like coconut or almond milk
  • 1 teaspoon vanilla extract optional but recommended
For the Topping
  • 1/2 cup peanut butter mixed with coconut oil for hard shell
  • 1/4 cup chopped peanuts for crunchy texture

Equipment

  • Food Processor or Blender
  • Popsicle molds

Method

Instructions
  1. Step 1: In a food processor or blender, combine the avocados, cocoa powder, low-carb sweetener, heavy cream, and vanilla extract. Blend until smooth and creamy.
  2. Step 2: Pour the mixture into popsicle molds, filling nearly to the top and leaving space for expansion. Insert popsicle sticks.
  3. Step 3: Freeze for at least 24 hours. Make sure they feel solid and not soft.
  4. Step 4: To unmold, dip the bottoms of the molds in warm water for 5 seconds. Gently pull on the sticks to release.
  5. Step 5: For toppings, prepare a peanut butter hard shell by mixing peanut butter and coconut oil. Dip each frozen pop into the mixture and sprinkle with chopped peanuts.
