For Cooking
  • 2 tablespoons Olive Oil Can substitute with vegetable oil if needed.

Equipment

  • Grill
  • gallon-sized freezer bag
  • Small saucepan

Method

Step-by-Step Instructions for Honey Dijon Chicken Sandwiches
  1. Begin by cutting the boneless skinless chicken breasts in half lengthwise to create thin cutlets.
  2. In a gallon-sized freezer bag, combine the chicken cutlets with the Honey Dijon marinade. Seal the bag tightly and massage the chicken gently to coat each piece evenly. Refrigerate for 1 hour or freeze for future use.
  3. Pour the remaining Honey Dijon marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer. Cook for about 5 minutes until slightly thickened, stirring occasionally.
  4. Preheat your grill to medium heat. Grill the marinated chicken cutlets on each side for approximately 4 minutes, or until the chicken reaches an internal temperature of 165°F.
  5. Once cooked, place the soft pretzel buns cut-side up. Layer a chicken cutlet on the bottom half, followed by a slice of Swiss cheese and three crispy bacon pieces. Drizzle the thickened sauce over the top and add lettuce and tomato slices if desired.
  6. Top the sandwiches with the pretzel bun halves and serve immediately while warm. Cut in half for easy handling.

Notes

Allow the chicken to marinate for at least 1 hour for maximum flavor absorption. For best results, consider marinating overnight. Swap pretzel buns for gluten-free options or use dairy-free cheese to accommodate dietary needs.
