Step-by-Step Instructions for Mini Croque Monsieur
  1. Preheat your oven to 425ºF (220ºC). Line a baking sheet with parchment paper.
  2. In a medium saucepan, melt butter over medium heat. Whisk in flour, stirring for about 3 minutes.
  3. Gradually add milk, whisking until thickened (roughly 5 minutes). Stir in mustard, salt, and pepper. Set aside.
  4. Roll out puff pastry until it measures approximately 13 x 15 inches and cut out 2-inch circles.
  5. Brush edges with beaten egg, place béchamel, ham, and cheese in the center, fold and seal.
