- In a large mixing bowl, combine 1 cup of granulated sugar, 1/2 cup of light corn syrup, 1/4 cup of honey, and 1/4 cup of water. Stir until smooth, about 2-3 minutes.
- Add 2 egg whites, 1/4 teaspoon of salt, and 1 teaspoon of vanilla extract. Mix well for another 2-3 minutes.
- Gently fold in 1 cup of chopped almonds and 1 cup of your choice of chopped dried fruits. Add optional 1/2 cup of mini chocolate chips if desired.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet, spacing them 2 inches apart.
- Chill in the refrigerator for about 1-2 hours until firm.
- Remove from the fridge, transfer to an airtight container, and store in the refrigerator for up to a week.
