- In a food processor, combine the frozen peas, pea shoots, grated Parmesan, olive oil, lemon juice, and garlic. Pulse until mostly smooth but slightly chunky, about 30 seconds.
- Preheat the broiler or grill to high heat. Drizzle olive oil over ciabatta slices and arrange on a baking sheet. Broil for 2-3 minutes per side, until golden brown.
- Spread a generous layer of pea pesto over each toasted ciabatta slice. Garnish with additional grated Parmesan, lemon zest, and pea shoots; drizzle with olive oil and sprinkle with black pepper.
