Preparation Steps
  1. In a food processor, combine the frozen peas, pea shoots, grated Parmesan, olive oil, lemon juice, and garlic. Pulse until mostly smooth but slightly chunky, about 30 seconds.
  2. Preheat the broiler or grill to high heat. Drizzle olive oil over ciabatta slices and arrange on a baking sheet. Broil for 2-3 minutes per side, until golden brown.
  3. Spread a generous layer of pea pesto over each toasted ciabatta slice. Garnish with additional grated Parmesan, lemon zest, and pea shoots; drizzle with olive oil and sprinkle with black pepper.
