- In a mixing bowl, combine thickened cream and pistachio spread. Use an electric mixer on medium speed to beat the mixture until it’s smooth and starts to thicken, which should take about 2-3 minutes.
- Increase the mixer speed to high and continue whisking the cream until stiff peaks form, about 3-5 minutes.
- Carefully transfer the whipped pistachio cream into a piping bag fitted with a wide nozzle.
- On each meringue nest, place approximately a teaspoon of strawberry jam in the center. Use the back of a spoon to create a small well for a generous dollop of pistachio cream.
- Begin piping the pistachio cream over the jam in each meringue, using a swirling motion. Fill the nests generously, making sure the cream peaks slightly above the meringue.
- Top each nest with a slice of fresh strawberry and a sweet cherry. Finally, sprinkle crushed pistachios over the top.
- Place the completed Pistachio Cream Meringue Nests in the refrigerator until ready to serve, ideally keeping them chilled for about 30 minutes.
