  1. Let egg whites sit in a clean mixing bowl for 30 minutes.
  2. Preheat oven to 200°F (93°C) and line baking sheets with parchment paper.
  3. Beat egg whites with vanilla extract and cream of tartar on medium speed until soft peaks form.
  4. Gradually increase speed to high and add sugar one tablespoon at a time until stiff peaks form.
  5. Remove 1/4 cup of meringue, add red food coloring, and gently fold it in.
  6. Pipe 2-inch heart shapes onto the baking sheets.
  7. Bake for approximately 20 minutes until crisp, then cool in the oven.
