- In a mixing bowl, combine Greek yogurt, Vegemite, minced garlic, minced ginger, chili powder, turmeric, ground coriander, ground cumin, and salt. Stir until smooth.
- Add the chicken thighs to the marinade and ensure they are well coated. Marinate for at least 10 minutes.
- Preheat the grill to a high temperature of 250℃ for about 5 minutes.
- Grill the marinated chicken thighs for 7 to 8 minutes on each side until charred and cooked through.
- Remove the chicken, let it rest for 5 minutes, then slice into strips.
- Assemble the wraps with butter lettuce, sliced chicken, cucumbers, tomatoes, mint, coriander, pickled onions, and extra yogurt.
