Ingredients
  

For the Marinade
  • 1 kg Chicken Thigh Boneless, skinless
  • 1/2 cup Greek Yoghurt Dairy-free yogurt works for a vegan twist
  • 1 tbsp Vegemite Substitute with miso paste if desired
  • 1 tbsp Minced Garlic Fresh garlic
  • 2 tsp Minced Ginger Fresh or ground
  • 1 tsp Chilli Powder Adjust to taste
  • 1/2 tsp Turmeric Powder Ground coriander works as a complement
  • 2 tsp Ground Coriander Enhances flavor
  • 1 tbsp Ground Cumin Essential for flavor
  • 1 tsp Salt Adjust to personal taste
For the Wrap
  • Butter Lettuce Fresh greens for wrapping
  • 2 Lebanese Cucumbers Add crunch
  • 3 Medium Tomatoes Any ripe variety
  • small bunch Fresh Mint Amplifies flavor
  • small bunch Coriander Can use parsley
  • Pickled Onions Essential for tang
  • Extra Greek Yogurt For added creaminess

Method
 

Preparation
  1. In a mixing bowl, combine Greek yogurt, Vegemite, minced garlic, minced ginger, chili powder, turmeric, ground coriander, ground cumin, and salt. Stir until smooth.
  2. Add the chicken thighs to the marinade and ensure they are well coated. Marinate for at least 10 minutes.
  3. Preheat the grill to a high temperature of 250℃ for about 5 minutes.
  4. Grill the marinated chicken thighs for 7 to 8 minutes on each side until charred and cooked through.
  5. Remove the chicken, let it rest for 5 minutes, then slice into strips.
  6. Assemble the wraps with butter lettuce, sliced chicken, cucumbers, tomatoes, mint, coriander, pickled onions, and extra yogurt.
