Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup fresh salsa store-bought or homemade
  • 1 cup shredded Monterey Jack cheese
  • 1 avocado diced
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, garlic powder, cumin, chili powder, salt, and pepper.
  3. Rub the spice mixture evenly over both chicken breasts.
  4. Place the seasoned chicken breasts in a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Remove the chicken from the oven and top each breast with fresh salsa and shredded cheese.
  6. Return the dish to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
  7. Remove from the oven and let rest for a few minutes. Top with diced avocado and chopped cilantro before serving.
  8. Serve with lime wedges on the side.
