- In a large mixing bowl, add 2 cups of Greek yogurt and 1 cup of peanut butter. Mix thoroughly for about 2-3 minutes until smooth and creamy.
- Incorporate 1/3 cup of honey or maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Stir well for another 1-2 minutes.
- Line an 8x8-inch baking dish with parchment paper and pour the peanut butter yogurt mixture into the dish. Spread evenly to about 1 inch thick.
- Transfer the dish into the freezer and allow to freeze for at least 4 hours until firm.
- Once frozen, remove the dish from the freezer, lift out using parchment paper, and cut into rectangular bars.
