Preheat your grill to medium-high heat.
In a small bowl, whisk together the Dijon mustard, honey, lemon juice, dill, and minced garlic until well combined.
Brush the salmon fillets with olive oil and season with salt and black pepper on both sides.
Place the salmon fillets skin-side down on the grill. Grill for about 6-8 minutes, depending on the thickness of the fillets.
Carefully flip the salmon and grill for an additional 4-6 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
During the last minute of grilling, brush the Dijon mustard sauce over the salmon fillets.
Remove the salmon from the grill and let it rest for a couple of minutes before serving.
