  • 1 pound Ground Beef Use 80/20 for best flavor
  • 2 cups Pasta/Rice/Tater Tots Use your favorite base
For the Flavor Layer
  • 2 cups Cheese (Mozzarella/Cheddar) Blend for creaminess
  • 1 cup Enchilada Sauce Or substitute with salsa
  • 2 cups Vegetables Bell peppers, onions, fresh or frozen
For Seasoning
  • 2 teaspoons Seasonings Garlic powder, taco seasoning, or to taste

Method
 

Preparation
  1. Gather all your ingredients, chop vegetables, and preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef for about 6-8 minutes until browned. Drain excess fat.
  3. Stir in the chopped vegetables and seasonings, adding the enchilada sauce. Cook for an additional 5 minutes.
  4. Layer the beef mixture in a deep baking dish, add the pasta/rice/tater tots, press down, and sprinkle with cheese.
  5. Cover with aluminum foil and bake for 25-30 minutes.
  6. Remove foil and bake for another 10 minutes until the cheese is bubbly and golden.
  7. Let the casserole cool for 5 minutes before slicing and serving.
