Preparation
- Gather all your ingredients, chop vegetables, and preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef for about 6-8 minutes until browned. Drain excess fat.
- Stir in the chopped vegetables and seasonings, adding the enchilada sauce. Cook for an additional 5 minutes.
- Layer the beef mixture in a deep baking dish, add the pasta/rice/tater tots, press down, and sprinkle with cheese.
- Cover with aluminum foil and bake for 25-30 minutes.
- Remove foil and bake for another 10 minutes until the cheese is bubbly and golden.
- Let the casserole cool for 5 minutes before slicing and serving.
