Preparation Steps
- Start by peeling, coring, and finely dicing 2 medium apples. Place the diced apples into a large mixing bowl.
- Zest and juice one lemon and one orange. Set the zest aside and juice will enhance flavor.
- In a large saucepan over low heat, combine the diced apples, citrus zest and juice, mixed dried fruits, ground mixed spice, ground cinnamon, and soft brown sugar. Stir in butter until well-coated.
- Gently heat the mixture for about 10–15 minutes, stirring regularly until ready and fragrant.
- Remove saucepan from heat and cool for about 10 minutes. Stir in brandy or fruit juice.
- Spoon the vegetarian mincemeat into sterilized jars, seal tightly, and store appropriately.
