  • 1 avocado diced

  • 1 cup black beans rinsed and drained
  • ½ cup red onion thinly sliced
  • ½ cup feta cheese crumbled
  • ¼ cup fresh cilantro chopped
  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell pepper, avocado, corn, black beans, red onion, and feta cheese. Toss gently to mix the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  4. Top with fresh cilantro and serve immediately.
