Instructions
  1. In a dry skillet over medium heat, cook strips of bacon for about 6-8 minutes until crispy and golden brown. Remove bacon and keep warm.
  2. Slice English muffins in half and toast them cut-side down in the skillet or use a toaster until golden brown for about 3-4 minutes; add butter on top after toasting.
  3. Whisk together eggs, milk, salt, and black pepper. Pour into a nonstick skillet over medium-low heat, stirring gently for about 5 minutes until softly set.
  4. Slice ripe avocado, scoop out the flesh, mash gently with a fork, and add lemon juice until smooth but still chunky.
  5. Assemble the sandwich: layer scrambled eggs, cheddar cheese, crispy bacon, and mashed avocado on toasted muffin bottoms. Add optional toppings if desired.
  6. Place muffin tops over assembled layers and serve warm for best flavor.
