  • 4.25 cups all-purpose flour Can substitute with gluten-free flour

  • 2 tsp instant yeast Can use rapid-rise yeast
  • 1 large orange zest Use fresh zest for best taste
  • 3 large eggs Can substitute with flax eggs
  • 0.5 cups lukewarm water Ensure it's not too hot
  • 0.75 tsp fine sea salt Reduce if using table salt
  • 0.67 cups unsalted butter Substitute with vegan butter for dairy-free
For the Filling
  • 4.5 oz dark chocolate Can use semi-sweet chocolate
  • 0.5 cups unsalted butter Use dairy-free alternatives if needed
  • 0.5 cups powdered sugar Maple powdered sugar can be used
  • 0.33 cups cocoa powder Dutch process cocoa gives richer taste
  • 0.25 tsp espresso powder Optional
For the Glaze
  • 0.33 cups water For syrup
  • 6 TBSP sugar Brown sugar can enrich the syrup
  • 1 TBSP orange zest For syrup
  • 1 TBSP orange juice Use freshly squeezed

Method
 

Dough Preparation
  1. In a stand mixer, combine all-purpose flour, sugar, instant yeast, and orange zest. Gradually mix in eggs and lukewarm water until a sticky dough forms.
  2. Sprinkle fine sea salt over the dough and mix in unsalted butter. Knead for about 10 minutes until smooth and elastic.
  3. Transfer dough to a greased bowl, cover, and refrigerate for 2 to 3 hours.
Filling Preparation
  1. Melt dark chocolate and unsalted butter in a double boiler. Stir until smooth, then mix in powdered sugar, cocoa powder, and optional espresso powder.
Assembling Babka
  1. Grease two loaf pans and roll out half the dough. Spread half the filling, roll tightly, cut in half lengthwise, twist, and place in pans.
  2. Cover babka and let rise for 1 to 1.5 hours.
  3. Preheat oven to 375°F (190°C) while dough rises.
Baking and Glazing
  1. Bake babka for about 30 minutes or until golden brown.
  2. Prepare syrup by dissolving sugar in water, then add orange zest and juice. Simmer for 2 minutes.
  3. Brush warm syrup over babka after baking and cool slightly before transferring to a wire rack.
