Dough Preparation
- In a stand mixer, combine all-purpose flour, sugar, instant yeast, and orange zest. Gradually mix in eggs and lukewarm water until a sticky dough forms.
- Sprinkle fine sea salt over the dough and mix in unsalted butter. Knead for about 10 minutes until smooth and elastic.
- Transfer dough to a greased bowl, cover, and refrigerate for 2 to 3 hours.
Filling Preparation
- Melt dark chocolate and unsalted butter in a double boiler. Stir until smooth, then mix in powdered sugar, cocoa powder, and optional espresso powder.
Assembling Babka
- Grease two loaf pans and roll out half the dough. Spread half the filling, roll tightly, cut in half lengthwise, twist, and place in pans.
- Cover babka and let rise for 1 to 1.5 hours.
- Preheat oven to 375°F (190°C) while dough rises.
Baking and Glazing
- Bake babka for about 30 minutes or until golden brown.
- Prepare syrup by dissolving sugar in water, then add orange zest and juice. Simmer for 2 minutes.
- Brush warm syrup over babka after baking and cool slightly before transferring to a wire rack.
