  • 8 oz Cool Whip Extra Creamy Whipped Topping Can substitute with homemade sweetened whipped cream.
For the Crust
  • 1 cup Gingersnap Crumbs Can be made from crushed gingersnap cookies.
  • 1/2 cup Melted Butter
For Garnish
  • 1 cup Whipped Topping/Sweetened Whipped Cream
  • 1/2 cup Sugared Cranberries
  • 10 leaves Mint Leaves

Preparation Steps
  1. Step 1: Prepare the Pie Plate by lightly buttering a 10-inch pie plate.
  2. Step 2: Cook the Cranberries by combining fresh or frozen cranberries, sugar, and water over medium heat. Stir for about 15 minutes.
  3. Step 3: Puree the Mixture in a blender until smooth, then chill in the refrigerator.
  4. Step 4: Make the Gingersnap Crust by mixing gingersnap crumbs and melted butter and pressing them into the pie plate.
  5. Step 5: Combine Cream Cheese and Cranberry Puree until smooth.
  6. Step 6: Fold in the Whipped Topping gently to maintain texture.
  7. Step 7: Fill the Chilled Crust with the cranberry mousse, smoothing the surface.
  8. Step 8: Chill to Set, covering the pie and refrigerating for several hours or overnight.
