For the Marinade
  • 4 pieces Bone-in, Skin-on Chicken Thighs Main protein
  • 1/4 cup Olive Oil Can substitute with any neutral oil
  • 1 tablespoon Sesame Oil Toasted preferred for richer taste
  • 1/4 cup Low Sodium Soy Sauce Regular can be used for more flavor
  • 1 tablespoon Worcestershire Sauce Can substitute with balsamic vinegar
  • 2 tablespoons Lemon Juice Can use lime juice or apple cider vinegar
  • 2 tablespoons Maple Syrup Can substitute with honey or brown sugar
  • 3 cloves Garlic (minced) Fresh preferred, can use garlic powder
  • 1/2 teaspoon Black Pepper (freshly ground) Adjust to taste
  • 1 teaspoon Kosher Salt Adjust quantity for table salt
For Added Flavor
  • 1 teaspoon Crushed Red Pepper Flakes For spice
  • 2 tablespoons Coconut Aminos Gluten-free soy sauce alternative
  • 1 tablespoon Agave Optional sweetener

Method
 

Step-by-Step Instructions
  1. In a large bowl or Ziploc bag, combine olive oil, sesame oil, low sodium soy sauce, Worcestershire sauce, lemon juice, maple syrup, minced garlic, black pepper, and kosher salt. Stir or shake well until mixed.
  2. Add the bone-in, skin-on chicken thighs into the marinade, ensuring each piece is well coated. Seal and refrigerate for at least 30 minutes, preferably overnight.
  3. Preheat your oven to 450°F (230°C). This high temperature is needed for caramelization.
  4. Remove the marinated chicken from the fridge and place in a baking dish, pouring all the marinade over the top.
  5. Bake the chicken uncovered for 25–30 minutes, checking for doneness with a meat thermometer at 165°F (74°C).
  6. Baste the chicken with juices from the dish at the 15–20 minute mark and broil for 2–3 minutes if desired.
  7. Remove the chicken from the oven and let it rest for 5 minutes before serving.
