- In a large bowl or Ziploc bag, combine olive oil, sesame oil, low sodium soy sauce, Worcestershire sauce, lemon juice, maple syrup, minced garlic, black pepper, and kosher salt. Stir or shake well until mixed.
- Add the bone-in, skin-on chicken thighs into the marinade, ensuring each piece is well coated. Seal and refrigerate for at least 30 minutes, preferably overnight.
- Preheat your oven to 450°F (230°C). This high temperature is needed for caramelization.
- Remove the marinated chicken from the fridge and place in a baking dish, pouring all the marinade over the top.
- Bake the chicken uncovered for 25–30 minutes, checking for doneness with a meat thermometer at 165°F (74°C).
- Baste the chicken with juices from the dish at the 15–20 minute mark and broil for 2–3 minutes if desired.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
