Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tablespoons tequila
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Method

  1. In a large bowl, whisk together lime juice, olive oil, tequila, honey, minced garlic, chili powder, salt, and black pepper until well combined.
  2. Add the shrimp to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
  5. Grill the skewers for 2-3 minutes on each side, or until the shrimp are pink and opaque.
  6. Remove from the grill and sprinkle with fresh cilantro. Serve with lime wedges on the side.
