  • ½ cup White Wine Vinegar Regular white vinegar works in a pinch.
  • ¼ cup Olive Oil Substitute with avocado oil if necessary.
  • 3 cloves Garlic Fresh garlic is best, but dried can suffice.
  • ¼ cup Fresh Parsley Use dried parsley sparingly if fresh isn’t available.
  • 1 small Shallot Substitute with onion if shallots are not on hand.
  • 1 tsp Fresh Lemon Thyme Regular thyme can be used as a substitute.
  • 1 tsp Dried Oregano Italian seasoning provides a nice alternative.
  • ¼ tsp Ground Pepper Fresh ground pepper yields the best flavor.
  • 1 tsp Salt Preferred choice is kosher salt.

Method
 

Step-by-Step Instructions
  1. Prepare Mushrooms: Place fresh baby bella mushrooms into a large pot, covering them with cool water to clean gently.
  2. Add Vinegar & Boil: Stir in ½ cup of white wine vinegar, cover, and bring to a vigorous boil for about 5 minutes.
  3. Drain: Pour mushrooms into a fine mesh strainer to drain excess water, then transfer them to a large mason jar.
  4. Mix Marinade: In a medium bowl, combine olive oil, minced garlic, chopped parsley, diced shallot, lemon thyme, oregano, ground pepper, and salt. Whisk until blended.
  5. Combine & Seal: Pour marinade over hot mushrooms in the jar, seal tightly, and shake gently to coat evenly.
  6. Cool & Refrigerate: Let cool to room temperature for about 30 minutes, then refrigerate for up to a week.
