Step-by-Step Instructions
  1. In a large mixing bowl, combine all-purpose flour, salt, pepper, and fresh oregano. Gradually drizzle in olive oil and cold water, mixing until a dough forms. Press the dough into a 9-inch pie pan evenly, and prick the bottom with a fork. Pre-bake at 375°F for 8-10 minutes until lightly golden.
  2. Heat a skillet over medium heat, adding a splash of olive oil. Sauté diced onion and minced garlic for 2-3 minutes. Add spinach and cook until wilted, about 2 minutes.
  3. In a mixing bowl, whisk together eggs, milk, and Greek yogurt if using. Sprinkle in Italian seasoning, nutmeg, salt, and pepper. Stir in sautéed mixture and crumbled feta to create the filling.
  4. Carefully pour the prepared filling into the pre-baked crust, spreading evenly.
  5. Return to oven and bake at 375°F for 30-35 minutes until set. Allow to cool for 5-10 minutes before slicing.
