- Begin by carefully removing the rind from the raclette cheese and slicing it into 1/2-inch thick pieces.
- In a large pot, bring salted water to a rolling boil. Add the baby potatoes and cook them for about 15–20 minutes, then drain.
- Arrange a platter with assorted salami and cured meats. Grill the sausages over medium heat for approximately 10–12 minutes.
- Preheat your broiler to high. In a cast iron skillet, place the raclette cheese slices, sprinkle thyme, and drizzle wine. Broil until bubbly and golden.
- On each plate, add boiled potatoes, grilled sausages, and cured meats, then top generously with melted cheese. Serve with cornichons and mustard.
