Ingredients
  

  • 8 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers any color
  • 1/2 cup diced cooked ham or cooked bacon
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray or olive oil for greasing

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.
  2. In a large mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the shredded cheddar cheese, diced bell peppers, diced ham, chopped green onions, salt, black pepper, and garlic powder. Mix until all ingredients are evenly distributed.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 18-20 minutes, or until the egg bites are set and lightly golden on top.
  6. Remove from the oven and let cool for a few minutes before gently removing the egg bites from the muffin tin.
