In a large mixing bowl, combine rolled oats, chocolate protein powder, almond butter, honey, mini chocolate chips, chopped mint leaves (or peppermint extract), and salt.
Mix all ingredients together until well combined. If the mixture is too dry, add water one tablespoon at a time until it reaches a sticky consistency.
Once the mixture is well combined, use your hands to roll it into small balls, about 1 inch in diameter.
Place the protein balls on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to firm up.
Store the protein balls in an airtight container in the refrigerator for up to one week.
