Baking Instructions
- Preheat your oven to 350°F (175°C) and grease two 8x4 inch loaf pans with butter or cooking spray.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, along with a splash of vanilla extract, until well combined.
- Sift in the all-purpose flour, baking soda, ground cinnamon, and salt. Stir gently until just combined.
- Fold in the shredded carrots and mashed bananas gently into the batter.
- Pour the prepared batter into the greased loaf pans and bake for 30-35 minutes.
- Once baked, allow the bread to cool in the pans for about 10 minutes before transferring to wire racks.
- For the frosting, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla extract, and ground cinnamon.
- Once cooled, generously spread the cream cheese frosting over the top of the loaves.
