Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease two 8x4 inch loaf pans with butter or cooking spray.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, along with a splash of vanilla extract, until well combined.

  5. Fold in the shredded carrots and mashed bananas gently into the batter.
  6. Pour the prepared batter into the greased loaf pans and bake for 30-35 minutes.
  7. Once baked, allow the bread to cool in the pans for about 10 minutes before transferring to wire racks.
  8. For the frosting, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla extract, and ground cinnamon.
  9. Once cooled, generously spread the cream cheese frosting over the top of the loaves.
