- Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
- Mash 3 ripe bananas until smooth. Mix in 1/2 cup unsweetened apple sauce, 1/4 cup maple syrup, and 1 teaspoon vanilla extract until creamy.
- In another bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/4 teaspoon salt, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg.
- Combine the dry mixture with the wet mixture, folding until just mixed; a few lumps are okay.
- In a small bowl, combine 1/2 cup ube halaya, 1/4 cup non-dairy milk, and 1 tablespoon lemon juice until smooth.
- In the loaf pan, layer half the banana batter, then half the ube mixture. Repeat and swirl gently.
- Bake for 50-60 minutes until a toothpick comes out clean or with a few moist crumbs.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
