  • 2 tsp Ras el Hanout Complex spice blend; use cumin and coriander as substitutes.
  • 1 tsp Ground Coriander Rich flavor; can omit if desired.
  • 2 tsp Sumac Provides tartness; can use lemon juice as an alternative.

For the Herby Yogurt Sauce
  • 1 cup Plain Greek Yogurt or Skyr Creamy base; can substitute with sour cream.
  • 2 tbsp Fresh Lemon Juice Brightens sauce; vinegar can substitute.
  • 2 cloves Garlic, roughly chopped Adds garlic flavor.
  • 1/4 cup Cilantro, roughly chopped Infuses fresh flavor; parsley can replace.

Method
 

Herby Yogurt Sauce Preparation
  1. In a food processor, combine the Greek yogurt, lemon juice, garlic, cilantro, and mint. Drizzle in olive oil, and season with salt and pepper to taste. Blend until smooth and creamy. Transfer to a bowl and refrigerate.
Kebab Preparation
  1. In a large mixing bowl, combine the ground beef, grated onion, minced garlic, parsley, mint, and spices. Mix gently until just combined, then refrigerate for at least 1 hour.
Forming Kebabs
  1. Preheat your grill to medium-high heat. Shape about 1/3 cup of the meat mixture into a log around each skewer, ensuring it’s tightly packed. Repeat until all kebabs are formed.
Grilling the Kebabs
  1. Clean and oil the grill grates. Cook the kebabs on the grill for 4-5 minutes on each side until they reach an internal temperature of 160°F and have a nice char.
Serving
  1. Remove the kebabs from the grill and let them rest for a couple of minutes. Serve on a platter with the herby yogurt sauce, fresh veggies, and lemon wedges.
