Ingredients
  

For the Kofta
  • 1 pound Ground Beef substitute with ground turkey or chicken for a lighter option
  • 1 cup Fresh Herbs (parsley, mint) use half the amount of dried herbs if unavailable
  • 1 medium Onion (grated) shallots can be a substitute for milder flavor
  • 2 cloves Garlic garlic powder can be used if fresh isn't handy
  • 1/2 cup Breadcrumbs opt for gluten-free breadcrumbs to keep gluten-free
For the Potatoes
  • 2 cups Potatoes (golden) sweet potatoes work well for a twist
For the Tahini Sauce
  • 1/2 cup Tahini Greek yogurt can lighten it up if preferred
  • 3 tablespoons Lemon Juice lime juice can be an excellent substitute
  • 2 tablespoons Olive Oil any neutral oil will do if you're out of olive oil

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground beef, grated onion, minced garlic, chopped fresh herbs, breadcrumbs, salt, and pepper.
  2. Wet your hands slightly and shape the beef mixture into elongated meatballs, placing them on a large plate.
  3. Preheat your oven to 350°F (175°C) and wash and slice the golden potatoes into wedges or rounds.
  4. Toss the potato slices with olive oil, salt, and pepper to coat evenly.
  5. Place the meatballs directly on top of the seasoned potatoes in the baking dish and bake for 30 minutes.
  6. Prepare the tahini sauce by whisking together tahini, fresh lemon juice, minced garlic, and water until smooth.
  7. After 30 minutes, drizzle the tahini sauce over the koftas and potatoes and return to the oven for an additional 15-20 minutes.
  8. Remove the dish from the oven and serve warm.

Notes
