Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. In an oven-safe pan, heat a splash of olive oil over medium heat. Add the chorizo slices and cook for about 10 minutes until crispy.
  3. Using the same pan, add more olive oil if needed and sauté the chopped red onion and minced garlic for about 5 minutes.
  4. Stir in the tomato and roasted red pepper sauce and chicken broth, and let simmer for about 2 minutes.
  5. Add spinach and gnocchi, letting them absorb the flavors as they simmer for about 3 minutes.
  6. Fold in the crispy chorizo, lemon zest, and chopped basil. Adjust seasoning if necessary.
  7. Transfer the mixture into an ovenproof dish and top with chunks of fresh mozzarella.
  8. Bake for about 15-20 minutes or until the mozzarella is golden and bubbling.
