Ingredients
  

  • 2 6-ounce salmon fillets
  • 2 tablespoons olive oil
  • 1 lemon zested and juiced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  3. Place the salmon fillets on the prepared baking sheet, skin side down. Brush the lemon herb mixture generously over the top of each fillet.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  5. Remove from the oven and let it rest for a couple of minutes. Garnish with fresh parsley before serving.
