Ingredients
  

  • 2 large boneless skinless chicken breasts (about 1 pound total)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs preferably Italian-style
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs oregano, basil, thyme
  • Salt and pepper to taste
  • 2 large eggs
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 teaspoon red pepper flakes optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat Oven:Set to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Coating:In a shallow dish, combine Parmesan, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.
  3. Prepare Egg Wash:Beat eggs in a separate shallow dish.
  4. Bread the Chicken:Dip chicken breasts in egg wash, then coat with breadcrumb-Parmesan mixture. Press to adhere.
  5. Sear Chicken:In a skillet, heat olive oil + 1 tbsp butter over medium-high. Sear chicken 3–4 mins per side until golden.
  6. Bake Chicken:Transfer to baking sheet. Bake 15–20 mins or until internal temp hits 165°F (74°C).
  7. Make Sauce:In the same skillet, melt remaining butter. Sauté garlic 1 min, then add cream, broth, and (optional) red pepper flakes. Simmer 5 mins to thicken. Season to taste.
  8. Serve:Let chicken rest briefly. Plate with sauce drizzled over and garnish with chopped parsley.
